They claim that the juice is made in a copper Coffey still. A search of the named distillery turned up this; http://www.rumgallery.com/travel--life/distillery-tours/ingenio-san-carlos---panama/pilsas-ingenio-san-carlos.html Certainly it's a giant alcohol plant with industrial stainless column stills...

I'm buying from England Nomad. They should be available in the US any day now. The bottles for the west coast had cleared customs and were at the distributor two weeks ago. Don't expect a wide release, they will only be available in select shops on the west and east coast. Seale's other products are...

Foursquare 2004 Single Blended. A blend of column and Pot still product, 8yrs in Bourbon Barrels bottled at full barrel proof, 59%. Yes indeed - I have burned through three of them so far. Damn good juice. It will be a limited release but definitely worth the effort to get your hands on a couple of ...

A really interesting subject CSP - thanks for a thought provoking post. Some thoughts and questions; Wouldn't the way the indigenous population currently drink rum have at least some connection to the historical spirit? Most typically drink inexpensive white (new make) rum often infused with fruit a...

AOC Agricole from Martinique isn't necessarily better than molasses based Rums but it is different. I have no problem with them attempting to set regulations as to what those differences actually are. The whole exercise is like the regulated differences between Armagnac and Cognac. Not all rum from ...

St James 15yr is excellent - but I really like a woody pour. If you like Bourbon you will probably love the 15yr. If you like sweet rums, then not so much. St James vintage 2001 is another I would recommend. It's only weakness is it's short finish. Clement Single Cask and the 6yr are the two stand o...

The master blender is the face and public personality for rum the same way the master distiller is for Bourbon. It's marketing. They both have a role to play but they don't call the shots. But someone has to be there at the brand promotion to sign the bottles and put a face with the product - just g...
