Ok, so about the rum. It is produced from a blend of Barbados style molasses (aka "cane honey"), a very light and sweet molasses, and some blackstrap as well. Aside from a special nutrient blend added to the fermenting wash, it is produced more or less like everything else we make. Long an...

Re: Post Apocalypse #1: Balcones sans the Chipster

The whole Tate affair proved that truth is stranger than fiction... ...wherein an egomaniacal distiller of unique - but inconsistently reviewed hobby spirit - claimed that without him, Balcones would never be the same. In a positive sense, that is actually true. To wit, check out this recently rece...

FWIW, John Little and John Foster are friends of mine and are genuinely very honest, forthcoming people. Now, that being said, I don't know the specifics of their rum (other than knowing the flavor well from enjoying it with them), but I can say with confidence that they do not intend to mislead or ...

I could be wrong, but that just doesn't seem like his style. Balcones has always done double copper pot distillation, for instance. The fermenters we started with were some basic open-top stainless steel tanks, roughly 500 gallons. We later brought in some Letina purpose-built fermenters, kind of li...

If you will Winston... ...and thanks for the info, much appreciated. Accepting the fact that the "brewer" he purchased from the beer facility has a capacity of 1500 gallons, and knowing that brewers don't do what we call "stilling" (ie the controlled heating, evaporation, reflux...

Jimbo, A brewing system's potential volume is measured in "barrels," each barrel being 31 US gallons, or approximately two kegs. The system he purchased can produce up to 50 barrels worth of brewed liquid (wash) at a time, roughly 1500 gallons. As far as I know he is building brand new pot...

I'm curious to see how this turns out. The guys over there called me a couple months ago to see if Balcones would be interested in licensing the technology. I think we're a bit too in love with the old fashioned way of doing things to be an early adopter. Either way I'm working on getting a sample b...

Well, IIRC, it was proposed by several (including himself) that it was wrong of us to continue to sell Balcones with his name attached to it. So, they got what they wanted, in a sense. Can't please everyone though.

We do have some new products in the works. Can't tell you what they are yet... :)
