Cane and Molasses Rum

I've been on YouTube looking at distilling videos and it occurred to me that a mixture of rum, one that is both cane juice and molasses (such as Zacapa 23) that it could be made in a variety of ways.

Correct me if I'm wrong on this:
  • At fermenting stage
    At distilation stage
    At barrel ageing stage
    At blending stage
Both cane and molasses or rum made from either can mixed at the various stages as above yes?

So do you know how some of these rums are created at what stages are the mixed and can you name them.

I would imagine that you would mix them as late as possible to get the most control of the final taste you want.

Simply, yes...


Technically speaking a distiller could mix cane juice and molasses at the fermentation stage (don't know of a single distiller who does this, particularly after the greater expense of obtaining fresh cane juice). One could throw cane juice "honey" into the mix. No one does.

Mix and match could also be done at the distilling, aging or bottling stage. Again I know of no distiller who does so at the distilling stage. Cane juice and molasses rums are distilled separately, and probably aged separately as the two different distillates would age differently.

As far as I know it is at the blending stage that these differing rums would be mixed. Zacapa is another matter completely - it is made solely from honey and although they claim a "solera" process, a look at their flowchart indicates a blending process.

Zippyjuice was once king but that was before the peeps caught onto additives, sugar and false claims (eg the "23 anos" fiasco).
