Because we've been talking about sugar...


...I couldn't help but refer to Che, actually Guevarra88 who took on a real and quite valuable project: he took two known pure rums, one young and one aged and proceeded to add known amounts of sugar to 1-3-5-10-15-30-40g, and reviewed sugar at each level. See link below.

His conclusion was not surprising in that we already know sugar does indeed affect the tastes and smoothness, but at the same time was VERY surprising in that the effects of sugar occurred at very low amounts, even 1g and 5g. Young rum was quickly made palatable and made to seem more aged - yet - truly aged rum was actually masked and destroyed by not much sugar.

The effect of sugar is serious, quick and dramatic; thus it is an equally serious concern. A rum with sugar is no longer the rum as we knew it.


Bottom Line

I wrote Che and was very pleased when he responded and assured me he's been very busy, but misses the Project and is coming back. I look forward to him - as I'm sure many of you will too...
