When Pigs Fly and Tap Dance Dept: "Ultra-Aging"

Post by Capn Jimbo »

It hadda be from Texas:

Recently brought to my attention by a Shillery poster (mamajuana)...

From an inventor who has a long list of what appears to be oil and pumping equipment, but claims aging can accomplished in hours to days. Seems to be sort of a couple of pressurized containers, wood chips/splinters/powder, et al.

Not worth your time, but here it is anyway...

How good is your memory?

Better than mine I hope... got another email from the MOR's mamajuana which refreshed my memory insofar as the inventor "Daniel Watson" (who I knew and met as simply "Daniel", at one of Burr's early days, Coconut Grove tastings. He called his rums "Temptryst". Sue Sea and I had the opportunity to meet him and the bunch of attendees got to taste four or five of his experimental spirits.

His notion was to "fast age" these rums in SS tanks, apparently pressurized and using a version of the more recent "flavor sticks", from very different woods, other than oak. Only one really interesting - I believe it was the hickory version - but honestly none of them rang our cajones in a big way.

At that time the fast aging gimmickry had not yet been exposed for its failure to duplicate honest, long aging. It's really a shame his experiments never really took off, as those many years ago the (naive) interest was there...
