I thought I would mention a great Bajan over proof rum that hit the markets in recent years.
At 65% ABV this is a real trooper. It's not aged at all and got some heat straight up, a bit too much to realize its nuances, though still fairly smooth at its burly 65%. This could easily be sipped in a bind but lets add some water and watch as it opens this up. I did about half ounce water to 1.5 oz spirit. With that water a few things happen here. The first is the heat is gone. The next is the flavors really come alive, nice classic Bajan spice, fruit, great full flavor here. The finish also goes on for an extended time when water is added. It really leaves a mark on the palate.
This is a real decent white rum worth mentioning and seeking out. It's really something when adding a bit of water that a short heated finish turns into an extended trip.
